These super simple 2 Ingredient Pumpkin Muffins are a quick and easy treat that the whole family will love. Just mix together pumpkin puree and boxed cake mix for a deliciously moist and flavorful muffin.
Ingredients
– 1 (15 oz) can pumpkin puree
– 1 (15.25 oz) box yellow cake mix
Instructions
1. – Preheat oven to 350°F. Grease a 12-cup muffin tin or line with paper liners.
2. – In a large bowl, stir together the pumpkin puree and yellow cake mix until just combined. Do not overmix.
3. – Scoop the batter evenly into the prepared muffin cups, filling them about 3/4 full.
4. – Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean.
5. – Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
– For a sweeter muffin, you can add 1/2 cup of brown sugar or chocolate chips to the batter.
– These muffins freeze well for up to 3 months. Thaw at room temperature before serving.
