Ingredients
– 1 cup low-fat cottage cheese
– 1/4 cup unsweetened cocoa powder
– 2 tablespoons honey or maple syrup
– 1 teaspoon vanilla extract
Instructions
1. In a high-speed blender or food processor, combine the cottage cheese, cocoa powder, honey or maple syrup, and vanilla extract.
2. Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed.
3. Divide the mousse into 4 or 6 small ramekins or cups.
4. Chill the mousse in the refrigerator for at least 30 minutes before serving.
5. Garnish with fresh raspberries, mint leaves, or a light dusting of cocoa powder, if desired.
Notes
