Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken broth

– 2 cups milk

– 1 (15 oz) can tomato sauce

– 1 (15 oz) jar alfredo sauce

– 8 oz lasagna noodles, broken into pieces

– 1 tsp dried basil

– 1 tsp dried oregano

– 1/2 tsp salt

– 1/4 tsp black pepper

– Shredded Parmesan cheese, for serving


Instructions

1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until the onion is translucent.

3. Pour in the chicken broth, milk, tomato sauce, and alfredo sauce. Stir to combine.

4. Add the broken lasagna noodles, dried basil, oregano, salt, and pepper. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the noodles are tender.

5. Serve the Alfredo Lasagna Soup hot, garnished with shredded Parmesan cheese.

Notes

For a heartier soup, you can add cooked, crumbled Italian sausage or diced chicken. Store any leftovers in an airtight container in the refrigerator for up to 4 days.
