Ingredients
– 3-4 lb pork shoulder, boneless or bone-in
– 2 cups apple cider
– 1 onion, sliced
– 4 cloves garlic, minced
– 2 bay leaves
– 2 sprigs fresh thyme
– 1 tsp salt
– 1/2 tsp black pepper
Instructions
1. 1. Preheat your oven to 325°F.
2. 2. Season the pork shoulder all over with salt and pepper.
3. 3. Heat a large, oven-safe Dutch oven or heavy-bottomed pot over medium-high heat. Add the pork shoulder and sear it on all sides until it’s nicely browned, about 3-4 minutes per side.
4. 4. Remove the pork from the pot and set it aside. Add the sliced onions to the pot and cook for 2-3 minutes, until they start to soften.
5. 5. Pour in the apple cider and use a wooden spoon to scrape up any browned bits from the bottom of the pot.
6. 6. Add the garlic, bay leaves, and thyme sprigs to the pot. Return the pork shoulder to the pot and cover it with a tight-fitting lid.
7. 7. Transfer the pot to the preheated oven and braise the pork for 4-5 hours, or until it’s extremely tender and falling apart.
8. 8. Remove the pot from the oven and transfer the pork to a cutting board. Use two forks to shred the meat.
9. 9. Discard the bay leaves and thyme sprigs. Taste the braising liquid and adjust the seasoning with salt and pepper as needed.
10. 10. Serve the shredded pork with the flavorful braising liquid spooned over the top. Enjoy!

– For best results, use a bone-in pork shoulder, as the bone adds extra flavor and moisture.
