Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 teaspoon ground cinnamon
– 1/2 teaspoon ground nutmeg
– 3/4 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 cups peeled and chopped Granny Smith apples
– 1 cup chopped pecans
– 1/2 cup packed brown sugar
– 1/2 cup heavy cream
– 2 tablespoons unsalted butter
Instructions
1. – Preheat the oven to 350°F. Grease a 9-inch round baking pan and line the bottom with parchment paper.
2. – In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
3. – In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla.
4. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped apples and pecans.
5. – Pour the batter into the prepared baking pan and bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
6. – Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
7. – For the caramel glaze, combine the brown sugar, heavy cream, and 2 tablespoons butter in a small saucepan. Bring to a simmer over medium heat, stirring constantly, and cook for 5 minutes.
8. – Remove from heat and let the glaze cool for 5 minutes, then drizzle it over the top of the cooled cake, allowing it to drip down the sides.
Notes
Store any leftover cake in an airtight container at room temperature for up to 4 days. The caramel glaze can also be made in advance and reheated gently before drizzling over the cake.
