Ingredients
– 8 slices thick-cut bacon, diced
– 3 cups peeled, diced apples (about 4 medium apples)
– 1/2 cup brown sugar
– 1/4 cup whiskey
– 2 tablespoons apple cider vinegar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground cloves
– 1/4 teaspoon salt
Instructions
1. – Cook the diced bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Transfer the cooked bacon to a paper towel-lined plate, reserving 2 tablespoons of the bacon grease in the skillet.
2. – Add the diced apples, brown sugar, whiskey, apple cider vinegar, cinnamon, cloves, and salt to the skillet with the reserved bacon grease. Bring the mixture to a simmer and cook, stirring occasionally, until the apples are very soft and the mixture has thickened to a jam-like consistency, about 20-25 minutes.
3. – Remove the skillet from the heat and stir the cooked bacon into the apple mixture. Allow to cool slightly before transferring to an airtight container.
4. – The Apple Whiskey Bacon Jam can be stored in the refrigerator for up to 2 weeks. Serve on charcuterie boards, sandwiches, or as a topping for roasted meats or vegetables.
Notes
For a smoother jam, you can use an immersion blender to puree the mixture before stirring in the cooked bacon. The jam can also be canned for longer-term storage.
