Ingredients
– 1 lb fresh asparagus, trimmed and chopped
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups vegetable or chicken broth
– 1 cup heavy cream
– 2 tbsp butter
– Salt and pepper to taste
Instructions
1. – In a large pot, melt the butter over medium heat.
2. – Add the diced onion and sauté for 5 minutes, until translucent.
3. – Stir in the minced garlic and cook for 1 minute, until fragrant.
4. – Add the chopped asparagus and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until asparagus is tender.
