Ingredients
– 1/2 cup corn flour (masa harina)
– 4 cups milk
– 1/2 cup white sugar
– 1 teaspoon ground cinnamon
– 1 teaspoon vanilla extract
Instructions
1. – In a medium saucepan, whisk together the corn flour and 1 cup of the milk until smooth.
2. – Add the remaining 3 cups of milk, sugar, and cinnamon to the saucepan.
3. – Heat the mixture over medium, stirring constantly, until it thickens and comes to a gentle simmer, about 5 minutes.
4. – Remove from heat and stir in the vanilla extract.
5. – Serve the atole warm, garnished with additional cinnamon if desired.
Notes
For a thicker consistency, use less milk. You can also add a cinnamon stick or a vanilla bean to the simmering mixture for extra flavor.
