Autumn Harvest Salad is a vibrant and nourishing seasonal salad that celebrates the flavors of the season. Featuring roasted butternut squash, crisp apples, juicy pomegranate seeds, and a creamy, tangy dressing, this salad is a delightful and satisfying meal.
Ingredients
– 4 cups mixed greens
– 1 cup roasted butternut squash cubes
– 1 apple, diced
– 1/2 cup pomegranate seeds
– 1/4 cup toasted pecans
– 2 tbsp olive oil
– 1 tbsp apple cider vinegar
– 1 tbsp Dijon mustard
– 1 tbsp honey
– Salt and pepper to taste
Instructions
1. Preheat oven to 400°F. Toss the butternut squash cubes with 1 tbsp olive oil, salt, and pepper. Roast for 15-20 minutes, or until tender and lightly caramelized.
2. In a large salad bowl, combine the mixed greens, roasted butternut squash, diced apple, pomegranate seeds, and toasted pecans.
3. In a small bowl, whisk together the remaining 1 tbsp olive oil, apple cider vinegar, Dijon mustard, and honey. Season with salt and pepper to taste.
4. Drizzle the dressing over the salad and toss gently to coat.
5. Serve the Autumn Harvest Salad immediately, while the squash is still warm.
Notes
For a variation, you can add crumbled feta or goat cheese to the salad. The salad can be prepared in advance, with the dressing added just before serving.
