Description
Baghali Ghatogh (Beans and Eggs) is a beloved Persian dish that combines tender green beans and perfectly cooked eggs in a flavorful, aromatic sauce. It’s a quick and easy meal that’s perfect for a comforting family-style dinner.
Ingredients
– 1 pound fresh green beans, trimmed and cut into 1-inch pieces
– 6 large eggs
– 1 medium onion, diced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon ground turmeric
– 1 teaspoon ground cumin
– 1/2 teaspoon ground coriander
– 1/4 teaspoon cayenne pepper (or to taste)
– Salt and black pepper to taste
– Fresh parsley or dill, chopped (for garnish)
Instructions
1. In a large skillet or sauté pan, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 2-3 minutes until translucent.
3. Stir in the minced garlic and cook for an additional minute, until fragrant.
4. Add the trimmed and cut green beans to the pan. Season with turmeric, cumin, coriander, cayenne, salt, and black pepper. Stir to coat the beans in the spices.
5. Pour in enough water to just cover the beans. Bring to a simmer and cook for 5-7 minutes, or until the beans are tender but still crisp.
6. Create small wells in the bean mixture and carefully crack the eggs into the wells.
7. Cover the pan and cook for 5-7 minutes, or until the eggs are cooked to your desired doneness.
8. Garnish the Baghali Ghatogh with chopped fresh parsley or dill.
9. Serve hot, with warm bread on the side.
Notes
– For a creamier texture, you can stir in a tablespoon or two of Greek yogurt or heavy cream at the end.
– Feel free to adjust the spice level to your preference by adding more or less cayenne pepper.
– This dish can be enjoyed for breakfast, lunch, or dinner.
