Baked Apples with Feta, Honey, and Cranberries are a delicious and easy-to-make seasonal dessert or snack. The tart cranberries, creamy feta, and sweet honey create a mouthwatering filling inside soft, baked apples.
Ingredients
– 4 large Honeycrisp apples
– 4 oz crumbled feta cheese
– 1/4 cup honey
– 1/2 cup fresh cranberries
– 2 tbsp chopped fresh rosemary
– 1/4 tsp ground cinnamon
Instructions
1. – Preheat the oven to 375°F (190°C).
2. – Cut the tops off the apples and use a melon baller or small spoon to scoop out the cores, leaving a 1/2-inch thick shell.
3. – In a small bowl, mix together the feta, honey, cranberries, rosemary, and cinnamon.
4. – Spoon the feta-cranberry mixture evenly into the hollowed-out apples.
5. – Place the stuffed apples in a baking dish and bake for 30-35 minutes, until the apples are tender and the filling is bubbly.
6. – Serve warm, with a drizzle of extra honey if desired.
Notes
For a more indulgent dessert, top the baked apples with a scoop of vanilla ice cream.
