Description

Ingredients

– 4 cod fillets (about 1 lb total)

– 2 tbsp unsalted butter, melted

– 1 tbsp olive oil

– 2 cloves garlic, minced

– 1 lemon, juiced and zested

– 1/2 cup heavy cream

– 2 tbsp fresh dill, chopped

– 1 tsp Dijon mustard

– Salt and pepper to taste


Instructions

1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.

2. Place the cod fillets on the prepared baking sheet and brush the tops with the melted butter.

3. In a small bowl, whisk together the olive oil, garlic, lemon juice and zest, heavy cream, dill, and Dijon mustard. Season with salt and pepper.

4. Bake the cod for 12-15 minutes, or until it flakes easily with a fork.

5. Drizzle the lemon-dill sauce over the baked cod and serve immediately.

Notes

For a lower-calorie option, use half-and-half or milk instead of heavy cream. You can also add a sprinkle of panko breadcrumbs or parmesan cheese to the top of the cod before baking for extra flavor and texture.
