Ingredients

– 4 boneless, skinless chicken breasts

– 1/4 cup balsamic vinegar

– 2 tablespoons olive oil

– 3 cloves garlic, minced

– 1 teaspoon Italian seasoning

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup shredded mozzarella cheese


Instructions

1. – Preheat oven to 400°F (200°C).

2. – In a shallow baking dish or resealable bag, combine the balsamic vinegar, olive oil, garlic, Italian seasoning, salt, and pepper. Add the chicken breasts and turn to coat evenly.

3. – Marinate for 15-30 minutes.

4. – Transfer the chicken to a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

5. – Remove the chicken from the oven and top each piece with shredded mozzarella cheese.

6. – Return the chicken to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

7. – Serve immediately, garnished with fresh basil or parsley if desired.

Notes

– Adjust baking time as needed, depending on the thickness of your chicken breasts.

– For extra flavor, you can also broil the chicken for 1-2 minutes after adding the mozzarella cheese to get a nice, golden-brown top.
