Ingredients

– 1 cup (2 sticks) unsalted butter, melted

– 1 cup light brown sugar, packed

– 2 large eggs

– 1 cup mashed ripe bananas (about 2-3 medium bananas)

– 1 teaspoon vanilla extract

– 1 1/2 cups all-purpose flour

– 1/2 teaspoon baking powder

– 1/4 teaspoon salt


Instructions

1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan with butter or non-stick cooking spray.

2. In a large bowl, whisk together the melted butter and brown sugar until well combined.

3. Add the eggs, one at a time, whisking well after each addition.

4. Stir in the mashed bananas and vanilla extract until fully incorporated.

5. In a separate bowl, whisk together the flour, baking powder, and salt.

6. Gradually fold the dry ingredients into the wet ingredients, mixing just until no dry pockets remain.

7. Spread the batter evenly into the prepared baking pan.

Notes

For chewier blondies, use overripe bananas. For a more cakey texture, use less ripe bananas. Store the blondies in an airtight container at room temperature for up to 4 days, or in the refrigerator for up to 1 week.
