Description
This hearty, comforting Beef Taco Soup is packed with tender beef, beans, corn, and bold taco seasonings. It’s a quick, one-pot meal that’s perfect for a cozy weeknight dinner.
Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 2 tbsp taco seasoning
– 1 (15oz) can black beans, drained and rinsed
– 1 (15oz) can kidney beans, drained and rinsed
– 1 (15oz) can corn, drained
– 1 (14.5oz) can diced tomatoes
– 4 cups beef broth
– Salt and pepper to taste
– Toppings: shredded cheese, sour cream, chopped cilantro
Instructions
1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbly, 5-7 minutes. Drain any excess fat.
2. – Add the diced onion and minced garlic to the pot. Cook for 2-3 minutes until the onion is translucent.
3. – Stir in the taco seasoning and cook for 1 minute to toast the spices.
4. – Pour in the beef broth, diced tomatoes, black beans, kidney beans, and corn. Bring the soup to a simmer and cook for 15-20 minutes, until heated through.
5. – Season with salt and pepper to taste.
6. – Serve the Beef Taco Soup hot, topped with shredded cheese, sour cream, and chopped cilantro.
Notes
– For a spicier soup, add a diced jalapeño or 1 tsp of cayenne pepper.
– Swap in ground turkey or chicken for the beef if desired.
– The soup can be made ahead and reheated. It also freezes well.
