Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking soda

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 large eggs

– 1/2 cup honey, plus more for drizzling

– 1 teaspoon vanilla extract


Instructions

1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.

2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes.

4. Add the eggs one at a time, beating well after each addition. Stir in the honey and vanilla extract.

5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

6. Scoop the batter into the prepared muffin cups, filling them about 3/4 full.

7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cakes to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

9. Drizzle the cooled cakes with additional honey, if desired.

Notes

For a more pronounced honey flavor, you can use a stronger-flavored honey, such as wildflower or buckwheat honey. To make the cakes extra moist, you can also add a tablespoon of sour cream or plain yogurt to the batter.
