Description

Ingredients

– 1 lb thinly sliced beef sirloin

– 1 green bell pepper, sliced

– 1 onion, sliced

– 8 oz cream cheese, softened

– 1 cup shredded mozzarella cheese

– 1/2 cup grated Parmesan cheese

– 1 tsp garlic powder

– 1 tsp onion powder

– 1/2 tsp black pepper

– 1 batch of low-carb dough (or 8 low-carb tortillas)


Instructions

1. – Preheat oven to 375°F (190°C).

2. – In a large skillet, cook the sliced beef, bell pepper, and onion over medium-high heat until the beef is browned and the vegetables are tender, about 8-10 minutes. Drain any excess fat.

3. – In a medium bowl, mix the cooked beef and vegetable mixture with the cream cheese, mozzarella, Parmesan, garlic powder, onion powder, and black pepper until well combined.

4. – Roll out the low-carb dough into a large rectangle, or lay out the low-carb tortillas. Spread the beef and cheese mixture evenly over the dough or tortillas.

5. – Carefully roll up the dough or tortillas tightly, starting from the short side. Slice into 1-inch thick rolls.

6. – Place the roll-ups seam-side down on a baking sheet lined with parchment paper.

7. – Bake for 20-25 minutes, or until the dough is golden brown and the cheese is melted and bubbly.

8. – Serve hot and enjoy!

Notes

For a creamier filling, add 1/4 cup of cream cheese. You can also use different types of cheese, such as provolone or Swiss, to customize the flavor. Store any leftover roll-ups in the refrigerator for up to 4 days.
