Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/4 teaspoon salt
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1 cup pitted and chopped dark cherries
– 1 cup semi-sweet chocolate chips
Instructions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla until well combined.
4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped cherries and chocolate chips.
5. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.
7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For a more intense chocolate flavor, you can use dark chocolate chips instead of semi-sweet. If you prefer a chunkier cookie, you can roughly chop the cherries into larger pieces. These cookies can be stored in an airtight container at room temperature for up to 1 week.
