Ingredients

– 1 pound large shrimp, peeled and deveined

– 2 tablespoons blackened seasoning

– 2 tablespoons olive oil

– 1 onion, diced

– 8 ounces cremini mushrooms, sliced

– 3 garlic cloves, minced

– 2 cups beef or chicken broth

– 1 cup sour cream

– 1 tablespoon Dijon mustard

– 1 tablespoon Worcestershire sauce

– Salt and black pepper to taste

– 12 ounces egg noodles, cooked according to package instructions

– Chopped parsley for garnish


Instructions

1. Pat the shrimp dry and toss with the blackened seasoning, ensuring they are evenly coated.

2. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and sear for 2-3 minutes per side, until just cooked through. Remove the shrimp from the skillet and set aside.

3. Reduce the heat to medium and add the onion to the skillet. Sauté for 5 minutes, until softened.

4. Add the mushrooms and garlic to the skillet. Cook for an additional 3-4 minutes, stirring occasionally, until the mushrooms are tender.

5. Pour in the broth and stir, scraping up any browned bits from the bottom of the skillet.

6. Stir in the sour cream, Dijon mustard, and Worcestershire sauce. Bring the mixture to a simmer and cook for 5-7 minutes, until the sauce has thickened slightly.

7. Return the seared shrimp to the skillet and gently toss to combine. Season with salt and black pepper to taste.

8. Serve the Blackened Shrimp Stroganoff over the cooked egg noodles, garnished with chopped parsley.

Notes

For a spicier version, increase the amount of blackened seasoning. You can also add a splash of white wine or lemon juice to the sauce for an extra burst of flavor.
