Ingredients
– 2 cups all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1 cup unsalted butter, softened
– 1 1/2 cups granulated sugar
– 2 large eggs
– 1 teaspoon vanilla extract
– 2 tablespoons blue food coloring
– 1/4 cup powdered sugar, for dusting
Instructions
1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
3. In a large bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract and food coloring until the batter is uniformly blue.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
6. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
7. Bake for 8-10 minutes, or until the cookies are set and the edges are slightly crisp.
8. Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
9. Once cooled, dust the Blue Velvet Cookies with powdered sugar and serve.
Notes
For a more intense blue color, add an extra 1-2 tablespoons of food coloring. Store the cookies in an airtight container at room temperature for up to 5 days.
