Description

Ingredients

– 3 cups all-purpose flour

– 1 tablespoon active dry yeast

– 1/4 cup granulated sugar

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, softened

– 3 large eggs

– 1 cup fresh or frozen blueberries

– 1/2 cup sliced almonds

– 1/4 cup brown sugar

– 1 teaspoon ground cinnamon


Instructions

1. In a large bowl, combine the flour, yeast, granulated sugar, and salt.

2. Add the softened butter and eggs, and knead the dough until it comes together and is smooth and elastic, about 10 minutes.

3. Cover the dough and let it rise for 1 hour, or until doubled in size.

4. Punch down the dough and roll it out into a large rectangle.

5. Scatter the blueberries evenly over the dough, then roll it up tightly into a log.

6. Cut the log into 12 equal pieces and arrange them in a greased 9×13 inch baking dish.

7. In a small bowl, mix together the sliced almonds, brown sugar, and cinnamon. Sprinkle the almond streusel over the top of the babka.

8. Cover and let the babka rise for 30 minutes.

9. Preheat the oven to 350°F. Bake the babka for 30-35 minutes, or until golden brown.

10. Allow to cool for 10 minutes before serving.

Notes

For a more intense blueberry flavor, you can use frozen blueberries. You can also swap out the blueberries for other fruits, such as raspberries or blackberries.
