Ingredients
– 4 cups whole milk
– 1 cup coconut milk
– 3/4 cup white sugar
– 1/4 cup cornstarch
– 1 teaspoon vanilla extract
– 1/2 cup shredded coconut, plus more for garnish
Instructions
1. In a large saucepan, whisk together the whole milk, coconut milk, sugar, and cornstarch until well combined.
2. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and begins to bubble, about 10-12 minutes.
3. Remove from heat and stir in the vanilla extract and 1/2 cup of shredded coconut.
4. Pour the coconut pudding into individual serving dishes or a large serving bowl. Refrigerate for at least 2 hours or until completely set.
5. Serve chilled, garnished with additional shredded coconut and a light dusting of cinnamon, if desired.
Notes
For a richer pudding, use 2 cups of whole milk and 2 cups of heavy cream instead of all milk. You can also add a touch of lemon or orange zest to brighten the flavors.
