Ingredients
– 4 medium russet potatoes, cut into 1/2-inch thick fries
– 4 eggs
– 1/2 cup unsalted butter
– 2 egg yolks
– 1 tablespoon lemon juice
– 1/4 teaspoon salt
– Pinch of cayenne pepper
– 2 tablespoons chopped fresh chives
Instructions
1. 1. Preheat oven to 400°F. Spread the fries on a baking sheet and bake for 20-25 minutes, flipping halfway, until golden brown and crispy.
2. 2. While the fries are baking, prepare the hollandaise sauce. In a double boiler or heatproof bowl set over a saucepan of simmering water, whisk together the egg yolks, lemon juice, salt, and cayenne until thickened, about 5-7 minutes.
3. 3. Gradually whisk in the melted butter, a little at a time, until the sauce is smooth and creamy. Remove from heat and keep warm.
4. 4. Poach the eggs in simmering water for 3-4 minutes until cooked to your desired doneness.
