Ingredients
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 egg
– 2 teaspoons vanilla extract
– 2 1/4 cups all-purpose flour
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 2 cups confectioners’ sugar
– 1/4 cup heavy cream
– Red and green sprinkles or decorations
Instructions
1. 1. Preheat the oven to 350°F. Line two baking sheets with parchment paper.
2. 2. In a large bowl, cream the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract.
3. 3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
4. 4. Scoop the dough by the tablespoonful and place them about 2 inches apart on the prepared baking sheets.
5. 5. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
6. 6. In a medium bowl, beat the confectioners’ sugar and heavy cream until smooth and creamy, about 2-3 minutes.
7. 7. Pipe or spoon the buttercream onto the cooled cookies, then top with the festive sprinkles or decorations.
Notes
Store the cookies in an airtight container at room temperature for up to 5 days. For a softer cookie, bake for a shorter time. Experiment with different buttercream flavors, such as peppermint or eggnog, for a fun twist.
