Ingredients

– 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

– 2 tbsp Cajun seasoning

– 2 tbsp olive oil

– 1 red bell pepper, sliced

– 1 yellow bell pepper, sliced

– 1 orange bell pepper, sliced

– 1 onion, sliced

– 3 cloves garlic, minced

– 2 tbsp fresh parsley, chopped


Instructions

1. – Season the chicken cubes with the Cajun seasoning and set aside.

2. – Heat the olive oil in a large skillet over medium-high heat.

3. – Add the chicken to the skillet and sear for 4-5 minutes per side, until golden brown and cooked through.

4. – Remove the chicken from the skillet and set aside.

5. – Add the sliced bell peppers, onion, and garlic to the skillet. Sauté for 5-7 minutes, until the vegetables are tender-crisp.

6. – Return the cooked chicken to the skillet and toss everything together, heating through for 2-3 minutes.

7. – Garnish with fresh chopped parsley and serve immediately.

Notes

For a spicier dish, increase the amount of Cajun seasoning. You can also add a splash of hot sauce or a sprinkle of crushed red pepper flakes. Serve over rice, pasta, or with a side salad for a complete meal.
