Description

This Cajun White Chicken Chili is a comforting and flavorful dish that’s perfect for a cozy family dinner. Packed with tender chicken, creamy white beans, and a blend of Cajun spices, it’s a satisfying meal that’s ready in just 30 minutes.


Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 1 onion, diced

– 2 bell peppers, diced

– 3 cloves garlic, minced

– 2 cans (15 oz each) white beans, drained and rinsed

– 2 cups chicken broth

– 2 tbsp Cajun seasoning

– 1 tsp ground cumin

– 1 tsp dried oregano

– 1/4 tsp cayenne pepper (optional, for extra heat)

– Salt and black pepper to taste

– Chopped fresh cilantro for garnish


Instructions

1. – In a large pot or Dutch oven, sauté the onion and bell peppers in a bit of oil over medium heat until softened, about 5 minutes.

2. – Add the garlic and cook for 1 minute, until fragrant.

3. – Add the cubed chicken and cook until browned on all sides, about 5-7 minutes.

4. – Stir in the white beans, chicken broth, Cajun seasoning, cumin, oregano, and cayenne (if using). Season with salt and black pepper to taste.

5. – Bring the mixture to a simmer and let it cook for 15-20 minutes, stirring occasionally, until the chicken is cooked through and the flavors have melded.

6. – Serve the Cajun White Chicken Chili hot, garnished with fresh chopped cilantro. Enjoy!

Notes

For a creamier chili, you can mash or purée some of the beans before adding them back to the pot. You can also adjust the spice level by adding more or less cayenne pepper. This chili also reheats well, making it a great meal-prep option.
