Ingredients
– 1 cup ricotta cheese
– 1/2 cup granulated sugar
– 2 large eggs
– 1 1/2 cups all-purpose flour
– 1/2 cup unsalted butter, softened
– 1/2 cup mini chocolate chips
Instructions
1. Preheat oven to 375°F. Grease an 8×8-inch baking pan.
2. In a medium bowl, beat the ricotta and sugar until smooth. Beat in the eggs one at a time until well combined.
3. In a separate bowl, whisk together the flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
4. Press the dough into the prepared baking pan. Spread the ricotta mixture evenly over the top and sprinkle with the chocolate chips.
5. Bake for 20-25 minutes, or until the crust is golden brown. Allow to cool completely before cutting into squares.
6. Dust the tops with powdered sugar before serving.
Notes
For a deeper flavor, add 1 teaspoon of vanilla extract to the ricotta mixture. Refrigerate leftovers for up to 5 days.
