Description

Elevate your pasta night with this incredible Caramelized Leek and Mushroom Gruyere Pasta. Tender, caramelized leeks and earthy mushrooms are tossed with creamy, melted gruyere cheese for a truly indulgent and flavorful dish.


Ingredients

– 8 oz. pasta (such as penne or fusilli)

– 2 tbsp olive oil

– 3 leeks, thinly sliced

– 8 oz. cremini mushrooms, sliced

– 3 garlic cloves, minced

– 1 cup heavy cream

– 1 1/2 cups shredded gruyere cheese

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. 1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. 2. In a large skillet, heat the olive oil over medium-low heat. Add the sliced leeks and cook for 15-20 minutes, stirring occasionally, until caramelized and softened.

3. 3. Add the sliced mushrooms to the skillet and cook for 5-7 minutes, until tender.

4. 4. Stir in the minced garlic and cook for 1 minute until fragrant.

5. 5. Pour in the heavy cream and bring to a simmer. Reduce heat and let the sauce thicken for 2-3 minutes.

6. 6. Add the cooked pasta and gruyere cheese to the skillet, tossing to combine. Cook for an additional 2-3 minutes, until the cheese is melted and the pasta is heated through.

7. 7. Season with salt and pepper to taste.

8. 8. Serve the Caramelized Leek and Mushroom Gruyere Pasta warm, garnished with chopped parsley.

Notes

This dish can be made ahead and reheated. The caramelized leeks can also be made in advance. For a richer flavor, use a mixture of gruyere and parmesan cheese.
