Ingredients
– 1 sheet of refrigerated pie crust
– 1 tbsp olive oil
– 3 large onions, thinly sliced
– 2 garlic cloves, minced
– 1/2 tsp salt
– 1/4 tsp black pepper
– 4 oz goat cheese, crumbled
– 1 tbsp fresh thyme leaves
Instructions
1. – Preheat your oven to 400°F (200°C).
2. – In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes, until the onions are caramelized and deeply golden brown.
3. – Add the minced garlic to the skillet and cook for an additional 2 minutes, until fragrant.
4. – Season the caramelized onion mixture with salt and pepper.
5. – Unroll the pie crust and cut it into 12 equal-sized rounds using a 3-inch round cookie cutter or biscuit cutter.
6. – Press the rounds into a 12-cup muffin tin, gently pressing the dough into the sides and bottom of each cup.
7. – Divide the caramelized onion mixture evenly among the tart shells, then top with the crumbled goat cheese.
8. – Bake for 18-20 minutes, or until the crusts are golden brown and the cheese is melted.
9. – Garnish with fresh thyme leaves and serve warm.
Notes
