Ingredients

– 1 sheet pre-made pie crust

– 1 medium butternut squash, peeled, seeded, and cubed (about 3 cups)

– 2 tablespoons olive oil

– 1 teaspoon salt, divided

– 1/2 teaspoon black pepper, divided

– 2 tablespoons unsalted butter

– 2 large yellow onions, thinly sliced

– 2 eggs

– 1 cup heavy cream

– 1/4 cup brown sugar

– 1 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg


Instructions

1. Preheat oven to 400°F.

2. Toss the butternut squash cubes with olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.

3. In a large skillet, melt the butter over medium heat. Add the sliced onions and the remaining 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook, stirring occasionally, for 20-25 minutes, until the onions are deeply caramelized.

4. In a large bowl, whisk together the eggs, heavy cream, brown sugar, cinnamon, and nutmeg.

5. Roll out the pie crust and press it into a 9-inch tart pan with a removable bottom. Spread the roasted butternut squash in an even layer in the crust, then top with the caramelized onions.

6. Pour the egg mixture over the top, making sure to evenly distribute it.

7. Bake for 35-40 minutes, until the center is set and the top is golden brown.

8. Allow to cool for at least 20 minutes before slicing and serving.

Notes

For a richer flavor, you can use a homemade pie crust instead of pre-made. This tart can be made ahead and refrigerated for up to 3 days.
