Ingredients
– 16 oz cream cheese, softened
– 1/2 cup prepared pesto
– 1/2 cup sun-dried tomatoes, drained and chopped
– 1/4 cup chopped fresh basil
– 1/4 tsp salt
– 1/4 tsp black pepper
Instructions
1. 1. In a medium bowl, beat the cream cheese with a hand mixer until smooth and creamy.
2. 2. Stir in the pesto, sun-dried tomatoes, basil, salt, and pepper until well combined.
3. 3. Transfer the mixture onto a piece of plastic wrap and shape it into a log.
4. 4. Wrap the log tightly in the plastic wrap and refrigerate for at least 2 hours, or until firm.
5. 5. Remove the cheese log from the refrigerator and unwrap.
6. 6. Transfer to a serving platter and serve with crackers, bread, or vegetables.
Notes
This cheese log can be made up to 3 days in advance. Store it tightly wrapped in the refrigerator until ready to serve. For a bolder flavor, use sun-dried tomatoes in oil instead of dried.
