Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups beef broth

– 1 (14.5 oz) can diced tomatoes

– 2 cups shredded cheddar cheese

– 1 cup heavy cream

– 1 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp salt

– 1/4 tsp black pepper


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium heat until browned and crumbled. Drain any excess fat.

2. – Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 5 minutes.

3. – Pour in the beef broth and diced tomatoes. Stir in the shredded cheddar cheese, heavy cream, oregano, basil, salt, and pepper.

4. – Bring the soup to a simmer and cook for 10-15 minutes, stirring occasionally, until the cheese is melted and the flavors are well-combined.

5. – Serve hot, garnished with additional shredded cheese, crispy bacon bits, and chopped green onions if desired.

Notes

For a thicker soup, you can add a tablespoon or two of all-purpose flour to the pot after sautéing the onions and garlic. This will help thicken the broth.
