Description

These Cheesy Baked Vegetable Rolls are a delicious and easy-to-make vegetarian appetizer. Packed with a variety of fresh vegetables and oozing with melty cheese, they’re sure to be a crowd-pleaser.


Ingredients

– 2 cups mixed diced vegetables (such as bell peppers, zucchini, and onions)

– 1 cup shredded cheddar cheese

– 1/2 cup grated Parmesan cheese

– 2 tablespoons fresh parsley, chopped

– 1 teaspoon dried oregano

– 1/2 teaspoon garlic powder

– 1/4 teaspoon salt

– 1 sheet of puff pastry, thawed


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large bowl, combine the diced vegetables, cheddar cheese, Parmesan cheese, parsley, oregano, garlic powder, and salt. Mix well until evenly distributed.

3. Unfold the puff pastry sheet and roll it out into a 12×16-inch rectangle.

4. Spread the vegetable and cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides.

5. Carefully roll up the puff pastry, starting from the short side, to create a log.

6. Cut the log into 12 equal slices and arrange them, cut-side up, on a baking sheet lined with parchment paper.

7. Bake for 18-22 minutes, or until the pastry is golden brown and the cheese is melted and bubbly.

8. Serve the Cheesy Baked Vegetable Rolls warm, garnished with additional fresh parsley if desired.
