Ingredients

2 cups all-purpose flour

1 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

2 large eggs

1 cup milk

1 cup fresh or frozen cherries, pitted and halved

1/2 cup sliced almonds


Instructions

1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick cooking spray.

2. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

3. In a separate bowl, beat the melted butter and eggs until well combined. Stir in the milk.

4. Pour the wet ingredients into the dry ingredients and mix just until combined, being careful not to overmix.

5. Gently fold in the cherries and sliced almonds.

6. Pour the batter into the prepared loaf pan and smooth the top.

7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Notes

For a crunchy topping, sprinkle the top of the batter with a tablespoon of sliced almonds before baking. You can also substitute dried cherries or cranberries for the fresh cherries. The bread can be stored in an airtight container at room temperature for up to 4 days.
