Tender, juicy Cherry BBQ Chicken Sliders are a quick and easy dinner that the whole family will love. The sweet and tangy cherry barbecue sauce complements the shredded chicken perfectly, making these mini sandwiches an irresistible weeknight meal or casual gathering dish.
Ingredients
– 2 lbs boneless, skinless chicken breasts
– 1 cup cherry preserves
– 1 cup barbecue sauce
– 1 tsp garlic powder
– 1 tsp onion powder
– 1/2 tsp smoked paprika
– 12 slider buns, split in half
– 1 cup shredded cheddar cheese
– Fresh parsley, for garnish
Instructions
1. – In a large pot or Dutch oven, bring 4 cups of water to a boil. Add the chicken breasts and simmer for 15-20 minutes, until cooked through.
2. – Remove the chicken from the pot and shred it using two forks.
3. – In a large bowl, combine the shredded chicken, cherry preserves, barbecue sauce, garlic powder, onion powder, and smoked paprika. Stir until well mixed.
4. – Place the slider buns on a baking sheet and toast them lightly.
5. – Scoop the cherry BBQ chicken mixture onto the bottom half of each slider bun. Top with shredded cheddar cheese.
6. – Place the sliders back in the oven for 2-3 minutes, just until the cheese is melted.
7. – Remove the sliders from the oven and garnish with fresh parsley.
8. – Serve hot and enjoy!
Notes
For a spicier version, add a pinch of cayenne pepper to the chicken mixture. You can also use any type of barbecue sauce or preserve that you prefer.
