Ingredients
– 2 cups rolled oats
– 1 cup chopped pecans
– 1/2 cup dried cherries
– 1/4 cup honey
– 2 tablespoons coconut oil, melted
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
Instructions
1. 1. Preheat the oven to 325°F (165°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
2. 2. In a large bowl, combine the rolled oats, chopped pecans, and dried cherries. Mix well.
3. 3. In a separate bowl, whisk together the honey, melted coconut oil, vanilla extract, and salt.
4. 4. Pour the honey mixture over the oat mixture and stir until everything is well coated.
5. 5. Transfer the mixture to the prepared baking pan and press it down firmly to create an even layer.
6. 6. Bake for 20-25 minutes, or until the granola bars are lightly golden and fragrant.
7. 7. Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang.

Notes
For a chunkier texture, press the mixture more firmly into the pan. Store the granola bars in an airtight container at room temperature for up to 1 week.
