Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 carrots, peeled and sliced

– 3 celery stalks, sliced

– 3 garlic cloves, minced

– 8 cups chicken broth

– 2 cups shredded cooked chicken

– 8 ounces egg noodles

– 2 tablespoons chopped fresh parsley

– Salt and pepper to taste


Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.

2. – Add the garlic and cook for 1 minute, until fragrant.

3. – Pour in the chicken broth and bring to a boil. Add the shredded chicken and egg noodles. Reduce heat and simmer for 10-12 minutes, until the noodles are tender.

4. – Stir in the chopped parsley and season with salt and pepper to taste.

Notes
