Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup breadcrumbs

– 2 eggs, beaten

– 1 cup cottage cheese

– 1 cup shredded mozzarella cheese

– 1/4 cup chopped fresh basil


Instructions

1. Preheat oven to 400°F.

2. Pound the chicken breasts between two sheets of plastic wrap or in a resealable plastic bag to an even thickness of about 1/2 inch.

3. Set up a breading station with the breadcrumbs in one shallow dish and the beaten eggs in another.

4. Dip the chicken breasts in the egg, then coat them in the breadcrumbs, pressing gently to adhere.
