Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
– 1 cup all-purpose flour
– 2 eggs, beaten
– 1 cup panko breadcrumbs
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/2 teaspoon garlic powder
– Vegetable oil for frying
Instructions
1. In a shallow bowl, combine the flour, salt, pepper, and garlic powder. Set aside.
2. In a separate shallow bowl, beat the eggs.
3. In a third shallow bowl, add the panko breadcrumbs.
4. Dredge the chicken cubes in the flour mixture, then dip them in the beaten eggs, and finally coat them with the panko breadcrumbs, pressing gently to adhere.
5. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat.
6. Working in batches, fry the breaded chicken cubes for 2-3 minutes per side, or until golden brown and cooked through.
7. Transfer the fried Chicken Pillows to a paper towel-lined plate to drain excess oil.
