Ingredients

– 2 tablespoons olive oil

– 1 onion, diced

– 3 celery stalks, diced

– 3 cloves garlic, minced

– 1 pound boneless, skinless chicken breasts, diced

– 4 cups chicken broth

– 3 medium potatoes, peeled and diced

– 1 cup heavy cream

– 1 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion, celery, and garlic, and sauté for 5 minutes until softened.

2. – Add the diced chicken and cook for 3-4 minutes, until lightly browned.

3. – Pour in the chicken broth and add the diced potatoes. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

4. – Stir in the heavy cream and dried thyme. Season with salt and pepper to taste.

5. – Serve hot, garnished with extra thyme or chopped parsley if desired.

Notes

For a thicker soup, you can mash some of the potatoes against the side of the pot. Store leftovers in the refrigerator for up to 4 days.
