Description

Chicken Scarpariello is a beloved Italian-American dish featuring tender, juicy chicken thighs simmered in a flavorful sauce with peppers, garlic, and white wine. This classic recipe is easy to make and ready in just 30 minutes, making it the perfect weeknight dinner.


Ingredients

– 1.5 pounds boneless, skinless chicken thighs

– 2 tablespoons olive oil

– 1 large bell pepper, sliced

– 4 cloves garlic, minced

– 1/2 cup dry white wine

– 1/4 cup chicken broth

– 2 tablespoons lemon juice

– 2 tablespoons chopped fresh parsley

– 1 teaspoon dried oregano

– Salt and pepper to taste


Instructions

1. Season the chicken thighs with salt and pepper.

2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 3-4 minutes per side until golden brown.

3. Remove the chicken from the skillet and set aside.

4. Add the sliced bell pepper and minced garlic to the skillet. Sauté for 2-3 minutes until fragrant.

5. Pour in the white wine and chicken broth. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the pan.

6. Return the chicken to the skillet and simmer for 10-12 minutes, or until the chicken is cooked through and the sauce has thickened.

7. Stir in the lemon juice, parsley, and oregano. Taste and adjust seasoning as needed.

8. Serve the Chicken Scarpariello immediately, garnished with additional parsley if desired.

Notes
