This classic Chicken Soup Recipe is a comforting and nourishing meal that’s perfect for chilly days. Made with tender chicken, fresh vegetables, and a flavorful broth, this easy-to-make soup is ready in just 30 minutes.
Ingredients
– 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
– 2 tablespoons olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 garlic cloves, minced
– 6 cups chicken broth
– 2 bay leaves
– 1 teaspoon dried thyme
– Salt and pepper to taste
– 2 cups egg noodles (or any small pasta)
– Chopped fresh parsley for garnish
Instructions
1. 1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. 2. Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes, until the vegetables are tender.
3. 3. Add the minced garlic and sauté for an additional minute, until fragrant.
4. 4. Pour in the chicken broth and add the bay leaves and dried thyme. Bring the mixture to a boil.
5. 5. Reduce the heat to medium-low and add the chicken. Simmer for 10-15 minutes, until the chicken is cooked through.
6. 6. Add the egg noodles (or small pasta) and continue to simmer for 8-10 minutes, until the noodles are tender.

Notes
– For a thicker soup, you can mash some of the cooked vegetables against the side of the pot.
– Add any other desired vegetables, such as potatoes, peas, or spinach.
