Ingredients
– 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
– 1 cup uncooked long-grain white rice
– 1 cup plain Greek yogurt
– 1 cucumber, peeled, seeded, and finely chopped
– 2 cloves garlic, minced
– 1 tbsp lemon juice
– 1 tsp dried dill
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup shredded mozzarella cheese
Instructions
1. – Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. – In a medium bowl, combine the yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper. Stir to combine.
3. – Place the chicken and uncooked rice in the prepared baking dish. Pour the tzatziki mixture over the top and stir to coat.
4. – Cover the dish with foil and bake for 30 minutes.
5. – Remove the foil, sprinkle the mozzarella cheese on top, and bake for an additional 10-15 minutes, or until the chicken is cooked through and the rice is tender.
6. – Let stand for 5 minutes before serving. Enjoy!
Notes
For extra flavor, you can add a teaspoon of lemon zest to the tzatziki mixture. This dish also works well with boneless, skinless chicken thighs.
