Ingredients

– 3 medium sweet potatoes, peeled and sliced into 1/2-inch rounds

– 1 tablespoon olive oil

– 1 teaspoon chili powder

– 1/2 teaspoon cumin

– 1/2 teaspoon garlic powder

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

– 1 cup shredded cheddar cheese

– 1/2 cup shredded monterey jack cheese

– 1 (15 oz) can black beans, drained and rinsed

– 1/2 cup diced onion

– 2 tablespoons chopped fresh cilantro (optional)


Instructions

1. – Preheat the oven to 375°F. Grease a 9×13-inch baking dish.

2. – In a large bowl, toss the sweet potato slices with the olive oil, chili powder, cumin, garlic powder, salt, and pepper until well coated.

3. – Arrange the sweet potato slices in an even layer in the prepared baking dish.

4. – Sprinkle the cheddar and monterey jack cheeses over the sweet potatoes.

5. – In a small bowl, mix the black beans and diced onion. Spread the bean mixture over the cheese.

6. – Bake for 30-35 minutes, or until the sweet potatoes are tender and the cheese is melted and bubbly.

7. – Remove from the oven and garnish with chopped fresh cilantro (if using).

Notes

This casserole can be made ahead of time and refrigerated until ready to bake. Simply add an extra 5-10 minutes to the baking time. You can also use different types of cheese, such as pepper jack or monterey cheddar, to change up the flavor.
