Ingredients

– 2 ripe avocados

– 1/2 cup unsweetened cocoa powder

– 1/2 cup creamy peanut butter

– 1/2 cup heavy cream

– 1/4 cup powdered sweetener (such as erythritol or stevia)

– 1 teaspoon vanilla extract

– 1/4 teaspoon sea salt


Instructions

1. In a food processor or high-powered blender, combine the avocados, cocoa powder, peanut butter, 1/4 cup of the heavy cream, sweetener, vanilla, and salt. Blend until smooth and creamy, scraping down the sides as needed.

2. In a separate bowl, whip the remaining 1/4 cup of heavy cream until it forms stiff peaks.

3. Gently fold the whipped cream into the avocado mixture until well combined.

4. Spoon the Chocolate Avocado Peanut Mousse into individual serving dishes or one large serving bowl.

5. Refrigerate for at least 2 hours before serving to allow the mousse to set.
