Ingredients

– 3 ripe bananas, mashed

– 1/2 cup unsalted butter, melted

– 1 cup granulated sugar

– 2 large eggs

– 1 tsp vanilla extract

– 1 1/2 cups all-purpose flour

– 1 tsp baking soda

– 1/2 tsp salt

– 2 tbsp unsweetened cocoa powder

– 2 tsp instant espresso powder


Instructions

1. – Preheat oven to 350°F (177°C). Grease a 9×5-inch loaf pan.

2. – In a large bowl, mash the ripe bananas. Whisk in the melted butter, sugar, eggs, and vanilla extract until well combined.

3. – In a separate bowl, whisk together the flour, baking soda, salt, cocoa powder, and espresso powder.

4. – Gently fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

5. – Pour the batter into the prepared loaf pan and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

6. – Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing and serving.

Notes

– For a more intense chocolate flavor, use 1/4 cup cocoa powder instead of 2 tbsp.

– Substitute strong brewed coffee for the espresso powder, if desired.

– Store leftover bread in an airtight container at room temperature for up to 5 days.
