Ingredients
– 3 large egg whites, at room temperature
– 3/4 cup granulated sugar
– 1/4 cup unsweetened cocoa powder
– 1/2 cup semi-sweet chocolate chips
Instructions
1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
2. In a large, clean, and dry bowl, beat the egg whites with a hand mixer or a stand mixer fitted with the whisk attachment until they form stiff peaks.
3. Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the egg whites until they are glossy and the sugar is fully dissolved.
4. Gently fold in the unsweetened cocoa powder until just combined, being careful not to overmix.
5. Fold in the semi-sweet chocolate chips.
6. Using a spoon or a piping bag, drop the meringue mixture onto the prepared baking sheet, spacing the cookies about 2 inches apart.
7. Bake for 20-25 minutes, or until the cookies are crisp on the outside and lightly browned.
8. Remove the cookies from the oven and let them cool completely on the baking sheet before serving.
Notes
For best results, make sure the egg whites are at room temperature before beating. Refrigerate any leftover cookies in an airtight container for up to 1 week.
