Ingredients
– 1 (14oz) can artichoke hearts, drained and chopped
– 2 cups chopped romaine lettuce
– 1 tomato, diced
– 2 tablespoons mayonnaise
– 1 tablespoon lemon juice
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
– 4 slices whole grain bread
Instructions
1. – In a medium bowl, combine the chopped artichoke hearts, romaine lettuce, and diced tomato.
2. – In a small bowl, mix together the mayonnaise, lemon juice, salt, and pepper.
3. – Spread the mayonnaise mixture evenly on the 4 slices of bread.
4. – Divide the artichoke salad mixture evenly among the 4 slices of bread, then top with the remaining bread slices.
