Ingredients
– 2 cups all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, softened
– 3/4 cup granulated sugar
– 2 large eggs
– 1 cup eggnog
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground nutmeg
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set it aside.
2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
4. Add the eggs, one at a time, beating well after each addition.
5. Stir in the eggnog, vanilla extract, and ground nutmeg until well combined.
6. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Avoid overmixing.
7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
10. Once cool, drizzle the top of the bread with a simple eggnog glaze (if desired) and serve.
Notes
For a richer flavor, you can substitute half of the eggnog with brandy or rum. Leftover bread can be stored in an airtight container at room temperature for up to 4 days.
