Ingredients

– 2 1/4 cups all-purpose flour

– 2 teaspoons ground ginger

– 1 teaspoon baking soda

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground cloves

– 1/4 teaspoon salt

– 3/4 cup unsalted butter, softened

– 3/4 cup packed brown sugar

– 1 large egg

– 1/4 cup unsulfured molasses


Instructions

1. – In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, cloves, and salt.

2. – In a large bowl, beat the butter and brown sugar until light and fluffy, about 2 minutes.

3. – Beat in the egg and molasses until well combined.

4. – Gradually stir the dry ingredients into the wet ingredients until a dough forms.

5. – Divide the dough in half, shape each half into a disk, wrap in plastic, and refrigerate for at least 1 hour.

6. – Preheat the oven to 350°F. Line baking sheets with parchment paper.

7. – Working with one portion of dough at a time, roll out the dough to 1/4-inch thickness on a lightly floured surface.

8. – Use cookie cutters to cut out shapes and transfer them to the prepared baking sheets, spacing them 1 inch apart.

9. – Bake for 8 to 10 minutes, until the edges are lightly browned.

10. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

11. – Decorate the cooled cookies with royal icing and festive sprinkles, if desired.

Notes

For best results, chill the dough for at least 1 hour before rolling and cutting. This helps the cookies hold their shape during baking. You can also make the dough a day in advance and bake the cookies the next day. Store the baked, undecorated cookies in an airtight container for up to 1 week.
